Mina’s Recipies…one of my favorites

Don’t you just love Crockpots (spell-check keeps trying to change this to crackpots – I love a few of those, too)?  Here is a delicious slow cooker recipe for busy (or lazy) days that I found a few years ago in a Publix (supermarket) Greenwise Market magazine.  I’ve made it often, using different parts of the chicken and sometimes with the white wine, sometimes with chicken broth.  It’s always delicious!

Italian Chicken with White Beans                                                                     

1 15-19 ounce can cannellini beans, rinsed and drained
1 cup chopped onion (1 large)
1 cup thinly sliced carrot (2 medium)
½ cup thinly sliced celery (1 stalk)
3 cloves garlic, minced                                                                                                            
2 pounds boneless skinless chicken thighs (or other pieces)     
¼ teaspoon salt
Black pepper to taste
1 14.5 ounce can diced tomatoes, with juice
½ cup dry white wine or chicken broth (low sodium)
1½ teaspoons dried Italian seasoning, crushed
¼ cup finely shredded Parmesan cheese (1 ounce), optional

1.  In a 3½-4 quart slow cooker combine the beans, onion, carrots, celery and garlic.  Place the chicken on the mixture in the cooker.  Sprinkle with salt and pepper.  In a medium bowl, combine undrained tomatoes, wine and Italian seasoning; pour over chicken in slow cooker.
2.  Cover and cook on low-heat setting for 7-8 hours or on high-heat setting for 3½ to 4 hours.
3.  Using a slotted spoon, transfer chicken and vegetables to serving bowls with enough of the liquid in each to moisten.  Sprinkle individual servings with Parmesan cheese, if desired.

Makes 6 servings.
